July at Belli Beef

Winter’s quiet has settled in, but there’s still plenty happening between the fences. Calves are arriving, the cows are content and we’re prepping for a biodynamic spray to boost fertility ahead of spring. Fence repairs and new troughs are on the list and one cow gave us a scare - but she’s recovering well.

Between the fences

It’s been a quieter month here at Belli Beef - we took a break away (complete with birthday cake and some well-earned rest) and came back to a paddock full of calves. They’re everywhere, bringing their usual charm and chaos with wobbly legs and wide-eyed curiosity.

The farm ticked along while we were gone, though one of our girls needed an emergency vet visit - all is well now and she’s on the mend with plenty of TLC. The grass is slow to grow thanks to the drier weather and cooler temps but we’re holding steady with rotational grazing.

We’re gearing up for a biodynamic spray across the farm to give a fertility and vitality boost - not just for the pasture, but for the herd too. A few paddocks need new troughs and, as always, the fences are demanding their share of love. Winter’s quieter rhythm is giving us space to prepare - because spring isn’t far off and with it comes new energy, fresh growth, and a whole lot of moo-mentum.

Recipe of the Month: Osso Bucco

There’s nothing quite like Osso Bucco on a cold evening - tender beef shins slow-braised with red wine, tomatoes, garlic and herbs until they fall apart with a spoon. This recipe is rich, rustic and exactly what winter calls for.

Serve it over parmesan polenta or buttery mash, and enjoy the kind of meal that gathers people around the table.

Why We’re Moving to a 45-Day Calving Cycle (And Why It Matters)

Calving season is one of the most exciting times on the farm. There’s nothing quite like watching new life emerge on the land you care for. But when calves are born across a long, drawn-out window, managing the herd becomes trickier and less efficient. That’s why we’ve made a shift at Belli Beef: we will be working with a 45-day joining cycle as of next year.

Know and Grow

Bone broth is having a well-deserved moment - and for good reason. It’s deeply nourishing, rich in collagen and minerals, great for gut health and the perfect winter warmer. We’ve written a blog all about its benefits (check it out on the website if you haven’t already).

But here’s an idea: would you be keen to join us for a bone broth demo at the farm? Nothing fancy - just a relaxed, hands-on session where we show you how to make it, store it and use it every day. We’ll answer your questions, sip some warm mugs together and send you home with recipes and bones to get started.

If this sounds like your cup of broth, sign up for our first demo.

Until next time...As always, thank you for being part of our farm family - for supporting real food, local farming and the slow, regenerative path. We’re grateful for your trust, your enthusiasm and your love of good beef and good land.

Wishing you warmth, full bellies and quiet winter moments by the stove.

See you next time,

The Belli Beef crew
