July at Belli Beef
Winter’s quiet has settled in, but there’s still plenty happening between the fences. Calves are arriving, the cows are content and we’re prepping for a biodynamic spray to boost fertility ahead of spring. Fence repairs and new troughs are on the list and one cow gave us a scare - but she’s recovering well.

Osso Bucco
There’s nothing quite like Osso Bucco on a cold evening - tender beef shins slow-braised with red wine, tomatoes, garlic, and herbs until they fall apart with a spoon. This recipe is rich, rustic and exactly what winter calls for.

We’ve been busy behind the fences, from new calves to a wild (but wonderful) Mother’s Day event, May’s been packed with stories, flavours and a whole lot of mud.
