Belli Beef Basics: From Broth Up
There is something grounding about a pot of broth gently simmering on the stove. It feels steady. Practical. Like the kind of cooking that looks after people from the inside out.
This month we’re beginning a new series called Belli Beef Basics. Over time it will cover everything from slow cooking to mince mastery beyond bolognese, to cooking steak with confidence. For March we are starting where every good family kitchen starts - with broth. Good food starts with good foundations and nothing is more delicious and nutritious than homemade beef broth.
Between the Fences
February gave us one of those classic farm lessons in humility.
My cousin was visiting from Africa and we decided it was the perfect opportunity to tackle a bit of weaning. With an extra set of hands and good intentions, we yarded the cattle and separated the cows and calves, feeling quite pleased with ourselves.
For about five minutes.
As anyone who has done this before will know, cows and calves have very strong opinions about being separated. Over the following days it seemed like every time I looked out a window there were animals somewhere they absolutely were not meant to be.
A calf would appear in the wrong paddock. A cow would be calling from the laneway. Someone would find a gap we didn’t know existed. At one point it felt like half the herd had staged a coordinated reunion from across the farm.
I’ll admit there were moments I was ready to throw in the towel.
But eventually the dust settles, the fences hold and the herd finds its new rhythm again. That’s farming. Some days everything goes to plan and other days the cattle remind you that they still have a vote.
At least my cousin got the full Australian farm experience.
The Belli Bites
This is one of those quiet kitchen basics that makes everything taste better. Once you have a good broth in the freezer, a proper gravy takes only a few minutes and turns simple meals into something comforting and satisfying.
The Belli Beat
This month we’re starting something new called Belli Beef Basics.
Over the coming months I’ll be sharing simple kitchen skills that make cooking beef easier and more enjoyable at home. Nothing complicated. Just practical farm kitchen knowledge that helps you get the most from good beef.
We’re beginning with one of the most traditional foundations: beef bone broth.
Later this week I’ll be sharing a simple step by step reel showing exactly how I make it in my own kitchen. If you’ve never made broth before, it’s a great place to start.

Know and Grow
Why Bones Matter
For generations, bones were one of the most valued parts of the animal in a traditional kitchen. A good pot of broth stretched meals further, added flavour to simple dishes, increases nutritional value and made use of something that might otherwise be overlooked.
When bones simmer slowly, the connective tissue and collagen break down into the broth. This is what gives a well made broth its rich flavour and silky texture.
That broth then becomes the base for so many meals. Soups, gravies, casseroles and slow cooked dishes all start from the same simple foundation.
Using bones well is also part of respecting the whole animal. When we raise cattle, every part has value and learning how to cook from the ground up helps honour that.
Over the next few weeks inside Belli Beef Basics, we’ll be starting right here with bone broth and building simple kitchen skills from there.
It’s amazing how much confidence in the kitchen can come from just a few good foundations.
