Thai Beef Salad with Sous Vide Brisket

Thai Beef Salad

Fresh, vibrant and full of flavor, this Thai Beef Salad is perfect for summer. We use our tender sous vide brisket to make this an easy and satisfying meal, ideal for lunch or dinner.


Ingredients

Salad

  • 400 g Belli Beef sous vide brisket, sliced thin

  • 4 cups mixed salad greens

  • 1 cup cherry tomatoes, halved

  • 1 Lebanese cucumber, thinly sliced

  • ½ red onion, finely sliced

  • Fresh coriander leaves, to garnish

  • Chopped roasted peanuts, to garnish (optional)


Dressing (We love this dressing – it keeps well in the fridge, so we always make double)

  • ½ tsp Thai chili, deseeded and chopped (or more depending on your preference)

  • 1 tsp ginger, roughly minced

  • 2 tbsp coriander leaves

  • 2¼ tsp white sugar

  • 2 tbsp fish sauce

  • 3 tbsp lime juice

  • 1 tbsp sesame seed oil

  • Small pinch of kosher or cooking salt


Method

  1. Prepare the dressing: Put all ingredients in a blender and blend until smooth. Set aside or refrigerate until ready to use.

  2. Assemble the salad: In a large bowl or platter, combine salad greens, cherry tomatoes, cucumber and red onion.

  3. Add the beef: Slice the sous vide brisket thinly across the grain and lay it over the salad.

  4. Dress and serve: Drizzle with dressing just before serving and garnish with fresh coriander leaves and peanuts, if using


Notes:

  • Belli Beef’s sous vide brisket is ready to go - simply slice and serve cold or warm it briefly on the BBQ if you prefer.

  • No brisket on hand? You can swap it out for grilled fillet steak, rump or even leftover roast beef slices.
