October at Belli Beef

It’s been a busy and fulfilling couple of months at Belli Beef - Welcoming Gabby to the team, hosting our first bone broth demo and opening the farm gates to the Sunshine Butterflies group. We’ve also taken some time to share what goes on behind the scenes, including how we keep our herd healthy with the 7-in-1 vaccine and why it matters.

As we shift into the warmer months, we’re finding new ways to enjoy our winter cuts - like our summer-ready BBQ short ribs recipe featured in this issue.

Between the fences

It’s been a big couple of months here at Belli Beef. We were thrilled to welcome Gabby to the team in mid-September as our full-time farm hand. With a passion for animal husbandry and horticulture, she’s hit the ground running - getting our veggie patch in shape, learning the ropes with the cattle and bringing a fantastic energy to the farm. We’re lucky to have her.

We also had the pleasure of hosting the Sunshine Butterflies group for a farm tour. It was a brilliant day sharing our story and giving an insight into how we run the farm and why we do things the way we do. We loved connecting with the group and showing them around the property. Moments like this remind us how important it is to share knowledge and create space for community on the farm.

Another highlight was our first ever bone broth demo and what a success it was! It was fantastic to share how we make our nourishing Belli Beef Broth, talk through the process and benefits, and connect with people who are just as passionate about quality, whole food. The feedback was incredible and we’re already planning the next one.

And on the cattle front - the babies are still dropping! Calving is ongoing and it’s always a special time on the farm watching new life arrive and settle into the herd.

The Belli Bites

Make the most of your winter cuts with this slow‑braised beef short rib recipe, lightened up for summer and finished on the BBQ for a rich, smoky sizzle. Served with fresh salad and crusty bread, it’s the perfect balance of comfort and sunshine.

The Belli Beat

At Belli Beef, animal health is a top priority. In our latest blog, we explain why the 7-in-1 vaccine is essential to protecting our cattle from preventable disease, how it supports herd wellbeing and what it means for the safety of the beef you eat. It’s all part of our commitment to ethical, responsible farming.

Know and Grow

This month we hosted our very first Bone Broth Demo and what a great morning it was! We shared how we make our Belli Beef Broth from scratch, using nothing but quality bones, clean ingredients and time. It was a great opportunity to dive into the nutritional benefits of broth, the cooking process and how to get the most out of each batch at home.

The response was overwhelmingly positive, with lots of questions, great conversations and some very happy taste testers. We’re already planning the next one - so if you missed out this time, stay tuned for dates.

There’s something powerful about knowing where your food comes from and how to use every part of the animal. Thanks to everyone who came along and made it such a great success.

Until next time...As always, thank you for being part of our farm family - for supporting real food, local farming and the slow, regenerative path. We’re grateful for your trust, your enthusiasm and your love of good beef and good land.

We’re so grateful for the support of our local community. Every meal shared with Belli Beef connects us back to you and we couldn’t do this without your trust and support. Thank you.

See you next time,

The Belli Beef crew
