Ingredients
3 tbsp ghee, or unsalted butter
1 onion chopped
1kg Beef Cubes
1 tbsp Ground Cumin
1 tbsp Ground Coriander
2 tsp Ground Turmeric
2 tbsp Garam Marsala
1 tsp chilli powder (adjust to preference)
1 tsp Ground Cardamom
1 tsp Ground Cinnamon
1 tsp Black Pepper
6 Garlic Cloves, crushed or sliced
2 tbsp Grated Fresh Ginger
2 cups Beef Stock
2 tbsp Tomato Paste
1 can Whole Peeled Tomatoes
1 can Coconut Cream
Method
Turn on the oven to 180degrees
Heat an ovenproof pot on the stove, on medium heat, add ghee and allow to melt
Add onion, cook until transparent, add garlic and cook for 2 minutes before adding the ginger and then add the spices 1 by 1, allowing each spice to become fragrant before adding the next one. (about 30 seconds - 1 minute) If it starts to stick to the bottom of the pot, remove from heat and add some water (but be careful of the steam). Return to the heat and carry on adding the remaining spices.
Once all the spices are added, add the beef cubes and stir to coat.Â
Add the rest of the ingredients and mix thoroughly
Transfer to the oven and cook for 2 hours
Check the tenderness of the meat, keep cooking in 20 minutes increments, if it’s not tender enough
Serve with your choice of rice and other curry accompanimentsÂ
