In this edition, we dive into the secret ingredient that makes meat unforgettable - time - with our latest blog on mastering cooking techniques. We’re also firing up the grill with a trending Crack Burger recipe, sharing what’s been happening Between the fences on the farm and checking in on the Syntropic Garden as spring approaches. Plenty to read, cook and enjoy.
Between the fences
It’s been a calm stretch on the farm lately. The weather’s doing its thing - some rain, some sun and nature’s carrying on as it should. Most of the calves are on the ground now and our next big task is to bring them into the yards, tag the calves and vaccinate the littlies to keep them healthy and strong.
Looking ahead, September brings some exciting change. We’re welcoming a full-time farm hand to the team. That extra set of hands will make a world of difference as we shift toward cell-based grazing, a move that’ll help improve our pastures and boost overall cattle health.
We’re also planning to part ways with our current bulls. After four years with us, they’ve done their job well - but we want to avoid any risk of inbreeding as their daughters start to mature. We're looking to shake things up and introduce an African breed bull into the herd to bring in some hybrid vigour. A fresh bloodline means stronger, more resilient cattle for the years ahead.
The Belli Bites
Recipe of the Month: Crack Burger
Juicy, cheesy, and a little bit addictive -this burger mixes Belli Beef with bacon, sour cream and cheddar for serious flavour. Smash it on the grill, load it into a bun and add your favourite toppings.
The Belli Beat
In a world full of timers, air fryers and recipe apps, it’s easy to forget that the best meat is cooked with patience - not pressure. Whether you're grilling ribeye, roasting a leg of lamb or simmering a stew, the real game-changer isn’t just technique. It’s time.
Time transforms tough into tender, bland into flavourful and ordinary into unforgettable. In this post, we’ll unpack the time-based techniques that make the biggest difference and how you can apply them at home.
Know and Grow
As our syntropic system matures, each season brings new lessons and opportunities to work with nature rather than against it. Spring is a time of growth, pruning, and guiding the next stage of succession—and it’s fascinating to see how much changes year to year.
